Default Excess Wiring?

Hello:

Just trying to clean up the extra wiring that I seem to have in my engine compartment. I am using the FAST EZ-EFI system that comes with its own ECU and harness so I won't be using the Ford ECU at all.

My question is, what excess wiring can I remove and can I simply just cut it and tape it up?

See photo below, I believe this set of connectors is for the old Mazda EFI stuff. Can I just hack it off?

One of the biggest mistakes I made in my build was doing just that. I cut the connectors off and taped up the wires. As a result I have dead wires running all over the place that I have no idea where they go or if they do anything or not. If I was to do it again I would have pulled the entire harness out, untapped it all and removed anything not needed to run the car. Yeah it is a heck of a lot of work but take it from someone who skipped most of this step - JUST DO IT!
